Rinse the eggplant thoroughly, pat dry, and transfer to a large bowl. Slice off the bottom and the top of the eggplant. Place the slices in a colander and sprinkle both sides generously with salt. Method Heat a wok over a high heat and add half the oil.

- Then using 20g of the cornflour coat the aubergines and mix well then add the rest of the cornflour making sure there are no lumps. Then fry these a few at a time. After you have fried them leave them aside. Then add 1 tbsp of oil to the wok add ginger garlic onions and chillies sauté these for 2 mins then add the sauce prepared earlier. Add the aubergines mix really well decorate with coriander serve warm tastes yummy…..
