Heat oil in wok or large skillet over high heat. Fry the garlic in medium to high heat until it starts to brown. Add in the spinach, mirin and soy sauce. When the spinach has cooked (which should be quite fast), turn off the heat and add in one teaspoon of good quality toasted sesame oil.

Instructions to make Spinach Stir Fry:
  1. Wash spinach thoroughly and dry. Soak goji berries and dried scallops in water.
  2. Heat oil in pan. Stir fry anchovies till crispy. Set aside. Add garlic and spinach to pan.
  3. Drain goji berries, scallops and add to pan.
  4. Add salt, add 1/4 cup of water and cover to steam for a few seconds
  5. Turn up heat. Drizzle beaten egg around the veg and leave it. Do not stir. Turn off the fire once cooked. Add anchovies back into dish.

Add in the spinach, mirin and soy sauce. When the spinach has cooked (which should be quite fast), turn off the heat and add in one teaspoon of good quality toasted sesame oil. If using a low quality toasted sesame oil, you might need two teaspoons (refer to notes). The addition of roasted chickpea powder enlivens the stir fry and gives it a great flavor. Goes well with rotis and rice.
