Marinate the sardines with salt, cayenne pepper, paprika and turmeic. Mean while, heat oil in a pan and add the mustard seeds. When they splutter, add the curry leaves and saute for a few seconds. To finish, throw in the pounded black pepper/cumin seeds powder and give the sardine dish one stir.
Steps to make Sardine spicy stir fry- my way:

- Heat the wok, and add some oil. throw the shallots, garlic, galangal, chilies. stir fry till fragrant. In the tomatoes, stir well and put sardine (filled the empty can with water), try not to stir too much on the fish. Add the water, salt, sugar, white pepper and water.
- Simmer for about 5 minutes, it should thicken, taste it and add what necessary. Last, add basil and mixed well. its done ;) I like to enjoy this with warm rice.
When they splutter, add the curry leaves and saute for a few seconds. To finish, throw in the pounded black pepper/cumin seeds powder and give the sardine dish one stir. Drained the sardine and keep the tomato sauce. Add in green pepper and tomato cubes, stir fry for a while, then add in chilli sauce and the. Stir-fry the garlic, onion and chilies until fragrant.
