To make the dal fry, I first boil the dal with turmeric and salt and then make the masala in a separate pan. Most of the flavor of this dal comes from using fresh onion, tomatoes, ginger and garlic. So you don't need a ton of spices here.

Instructions to make Dal fry:
  1. First cook dal in a pressure cooker.
  2. Now take another pan, heat pan, take ghee in it, now add cumin, green chillies.
  3. When they turn brown, add onion and let it turn pink.
  4. Now add tomatoes and cover the pan so that tomatoes get properly cooked.
  5. Now add 1/2 tbsp Maggi masala and 1/4 tbsp salt. (If you have already salt to dal else you could add 1 tbsp salt)
  6. Now mix everything.
  7. Add this pan mixture to the pressure cooker. And stir.
  8. Now let it boil on medium flame.
  9. Serve

Most of the flavor of this dal comes from using fresh onion, tomatoes, ginger and garlic. So you don't need a ton of spices here. I have just used a bit of garam masala, chili powder and kasuri methi for that fragrance at the end. Dal Fry is a spicy punjabi dish made from mixed dals like toor, chana, moong, masoor dal or just with chana and toor dal. This authentic Punjabi daal fry recipe follows the former approach and uses assortment of protein rich dals cooked in pressure cooker and mixed with Indian curry spices sautéed in pure ghee.
