Heat a wide pan with oil and add mustard seeds. When it crackles, add the urad dal and when it gets lightly golden brown, add the curry leaves. Add sliced onions, pinch of sugar, little salt, sauté till they become nicely golden in colour. Wash fresh brinjals (green or purple) preferably small ones in cold water and keep aside. Mix Chilli powder, turmeric powder sambar powder and salt in cup.
