In a pan / kadai, heat oil and add hing and then add the arbi pieces and shallow fry on medium heat. Flip the pieces when one side becomes crispy golden. Keep tossing occasionally till all the pieces are golden. Seve this cripsy arbi fry hot as a side dish or as a starter.

Steps to make Arbi fry:
  1. Boil arbi in cooker and wait for 2 whistles on high flame
  2. Heat a wok, add mustard oil and heat oil on high flame so that smell of oil reduces. Switch the flame to low. Add asafoetida, carrom seeds, cumin seeds and mustard seeds. Let the mustard seeds crackle then add ginger and green chilli. Now add turmeric powder, red chilli powder and coriander powder and add arbi. Fry arbi on high flame by continuously stirring. Add salt garam masala.
  3. Finally add lemon juice, mix well and garnish with chopped coriander leaves. Serve hot with roti or parantha.
