- Prepare 250 gm Karonda
- Take 8-10 Small onions
- Take 5-6 Green chillies
- Get leaves Few curry
- Get Pinch Hing (Asafoetida)
- Get 1 Teaspoon mustard seeds
- Prepare 1/2 teaspoon haldi powder (turmeric)
- Take to taste Salt according
- Prepare As per taste Red Chilli powder
- Get 1 Tablespoon mustard oil
Karonda (Caranda in English) is a berry-sized seasonal fruit, tastes sour and acidic. These are commonly used as a condiment in Indian pickles and spices. They are rich source of iron and vitamin C. Karonda fruits, botanically classified as Carissa carandas, are sour, subtly sweet berries growing on a woody shrub belonging to the Apocynaceae family.
Steps to make Karonda Fry (Carandas Fry):
- Wash and clean Karonda. Now cut it into two halves and remove the seeds as shown in picture
- Chop the onion into four parts and keep aside - In a pan take a tablespoon of mustard oil and heat it. Once it is nicely heated and smoky, add mustard seeds and a pinch of hing along with curry leaves
- Now add Chopped onions to this and saute it for 2 minutes
- Add chopped green chillies and saute it for a minute or two and then add haldi powder, red chilli powder and salt
- Now add Karondas to this, mix it well and cook for 4 to 5 minutes
- Karonda fry is ready serve it with rice or Roti
