- Line a rimmed baking sheet wit parchment paper. Preheat oven to 400
- place chick-peas in a single layer on baking sheet and dry roast for 40 minutes, shaking pan every 10-15 minutes until golden and crisp
- Meanwhile combine all spices in a small bowl and mix well
- remove chick-peas from oven spray to coat lightly with oil and sprinkle on spices, return to oven for about 5 minutes to cook spices on, but watch they can burn quickly
- They are best eaten warm or the same day they are cooked, a great crunchy snack, also great on salads like a crouton!!
Sprinkle the curry powder, garam masala, garlic powder, white pepper and salt over the chickpeas and then shake the pan again to evenly distribute the spices. Pour onto prepared baking sheet and sprinkle with remaining seasoning. Spread chickpeas on prepared baking sheet evenly so they aren't touching. While chickpeas are baking, combine cumin, paprika, garlic powder and cayenne pepper in a small bowl. Remove the chickpeas from the oven and toss with the spice mixture.
