It's a staple in Indian homes during winters and one of my personal favorite. Ever since I can remember, I have been obsessed with chikki. There are several different varieties of chikki, two of the most common ones being Peanut Chikki and Til Chikki. Each variety of chikki is named after the ingredients used.

Instructions to make Peanut Til Chikki:
  1. Heat a pan and dry roast peanuts for 1minute. Remove from pan and ruboff the skin of peanuts and grind them coarsely.
  2. In the same pan dry roast white Til for a minute. Remove and coarsely grind it.
  3. In the same pan add 1tsp ghee and jaggery. Continue to cook till jaggery melts. Drop one drop in water to check if it solidifies.
  4. Add ground peanuts. Til and cardamom powder. Mix it well and switch off the gas immediately.
  5. Pour the mixture on a greased surface lined with til. Roll it with a greased rolling pin into a flat square. Sprinkle some pistachios and cut it into squares. Alternatively you can put the mixture in rose moulds and allow it to cool.
  6. Remove when cooled and hardened. You can store it in an airtight box for a month.

For example, Chana Dal Chikki/Gajak, Peanut Gajak/Chikki, Almond chikki, or like in this instance, it is named after sesame seeds (til) and called Til Chikki.
