The ingredients needed to make Lentils and rice:
  1. Make ready 1 cup lentils (which you have soaked overnight)
  2. Get 5-6 cups water (dissolve 1 tsp of tomato paste in one)
  3. Make ready leaf celery (dry or fresh)
  4. Take 1 clove garlic
  5. Get 1/2 cup parboiled rice
  6. Prepare 2 bay leaves
  7. Take salt and pepper
  8. Prepare 3 tbsp olive oil
  9. Take 1 large onion

Remove from heat and stir in the well-browned onions. Cook at a boil until the lentils are just tender. Add the rice, salt and olive oil, and bring back to a boil. Rinse rice (we prefer long grain brown rice) and lentils thoroughly in three changes of water.

  1. Bring the water to the boil, add the lentils with the leaf celery, the carrot, the garlic and simmer for 10'.
  2. Add the rice, the bay leaves, the onion and season with salt and pepper.
  3. Turn down the heat and let it until all the liquids start to be absorbed. Add the oil and continue boiling over low heat until it thickens.
  4. Serve hot preferably!

Mujadara is a classic Arabic recipe featuring cooked lentils and rice, caramelized onions, herbs and yogurt. It's a delicious vegetarian main dish!
